In Brazil, picanha is the most prized cut on the animal — and when you cook it whole, you understand why. The full sirloin cap, with its thick fat cap left completely intact, is folded into a C-shape, skewered, and cooked over high heat. As it rotates over the fire, the fat renders and bastes the meat from the outside in, creating a crust that’s deeply caramelized and a center that’s tender, juicy, and rich with flavor.

Season generously with coarse salt — that’s all it needs. Slice it tableside in thin cuts from the outside in, working your way toward the center as it continues to cook. This is the cut that turns a backyard cookout into an event.
